Caramelized Leek Dip
Caramelized leeks, fresh scallions and chives give this French-onion-inspired dip a triple hit of allium flavor. Serve with crudités and potato chips.
Ingreadients :
- 2 tablespoons extra-virgin olive oil
- 3 medium leeks, white & light green parts only, finely diced
- 1 tablespoon white wine
- ¾ cup low-fat plain yogurt
- ¾ cup mayonnaise
- 2 scallions, thinly sliced
- 2 tablespoons chopped fresh chives
- 1 teaspoon lemon juice
- ¼ teaspoon cayenne pepper
- ¼ teaspoon salt
- ¼ teaspoon ground pepper
Step by Step :
- Heat oil in a large skillet over low heat. Add leeks and cook, stirring occasionally, until tender and golden, 20 to 25 minutes. Add wine, stirring to scrape up any browned bits. Remove from heat and let cool for 5 minutes.
- Meanwhile, combine yogurt, mayonnaise, scallions, chives, lemon juice, cayenne, salt and pepper. Stir in the cooled leeks.
