75g baby rocket
25ml best quality white wine vinegar
extra virgin olive oil
black lava salt
25g toasted pistachios
1 thinly sliced piece of St. Agur sheep’s milk cheese
3 thin slices of green apple[/vc_column_text][/vc_column_inner][vc_column_inner width=”3/4″][vc_column_text]Cut the long, thin, slice of St. Agur cheese into a rectangle about 8 by 18cm long. Wrap the cheese into a cylinder and press the ends together just enough so that they hold its shape.
In a mixing bowl place the rocket, olive oil and vinegar together and toss them till evenly coated. Season with the black salt.
Gently place the greens into the cheese cylinder in the center of a plate. Stack the apple slices on top of each other and cut them in half and fan each stack on opposite sides of the salad so that you have 3 half slices on either side. Drizzle with a little olive oil and the toasted pistachios.[/vc_column_text][/vc_column_inner][/vc_row_inner][/vc_column][/vc_row]
